Arrogant Bastard Chipotle Sauce Marinated Skirt Steak & Chipotle Carrots

Notes

The Steak:
1 lb Skirt steak
1/2 bottle or more of <a href="http://amzn.to/1XOiAuV" target="new">Arrogant Bastard Chipotle Sauce</a>
The Carrots:
1 lb carrots, cut into 1/4 in. slices
2 tbsp butter
2 garlic gloves minced
1 tbsp chipotle powder
1 tbsp curry powder
1/2 tbsp paprika powder
1 tbsp cumin powder
chopped cilantro to taste
salt and pepper to taste
Pour the Arrogant Bastard Chipotle Sauce into a medium size tupperware and then place the meat into the tupperware, ensuring that it is covered in sauce on both sides. Place the lid over the tupperware and return to refrigerator while preparing the carrots.
Cut the carrots into 1/4 in slices. Heat the butter in a large non-stick pan and add in the garlic. Add in the carrots until well combined. Add in the chipotle , curry, paprika, and cumin powders, stirring well. Cook until carrots have browned slightly and you can slide a fork through them without any resistance (about 20 minutes).
While the carrots are cooking, heat up the grill and brush a bit of oil on the grates. Once the grill is heated up, place the skirt steak on the grill, cooking each side for about 4-6 minutes (or until your preference of how well done the meat is), brushing the sauce left over in the tupperware over the meat. Take the meat off the grill and allow it to cool slightly before slicing it. Then serve.
If you want to tone down the spice, use less chipotle powder on the carrots and don't brush the extra chipotle sauce over the meat before removing it from the barbecue.
